You will have to use the Potion of Animal Speaking to be able to interact with the pub. While interacting, you will have two options. You can either try to make the pub believe that he is dead or you can just forcefully prove that. If you try the forced way, the pub will start attacking you. You would have no choice left but to kill the pub. Hence, make sure to choose the other option of talking if you want to adopt the pub.

While interacting, you have to ask the pub to join you. To this, the pub will say no as he doesn’t want to leave his master. You can then tell the pub that if his master doesn’t wake up, then the pub can follow your scent and meet you. This will help build the pub’s trust in you so that you can then adopt him in Baldur’s Gate 3. The pub will say thank you and then you can leave the place.
